Way back when... I (Genia) had a food blog. And now I have a photography blog. 

And I thought, why the heck can't I have both, in one? 

So Waller Photo & Design's blog has now become our lifestyle blog. Where you'll find musings (mainly mine - again, Genia here) about life, recipes we love, and of course our photography. 

And now, on to why you're all here... hopefully. Heck, I'm just glad you're here. 

Chicken Shepherd's Pie

Original Recipe: Simply Stacie

Cast of Characters:

  • 6 Potatoes, peeled and cut into chunks
  • 2 1/2 Cups Milk, separated
  • 2 Tbsp. Butter, separated
  • Salt & Pepper, to taste
  • 2 Onions, chopped
  • 3 Cloves Garlic, minced
  • 1/4 Cup Flour
  • 1 Cup Chicken, cooked and roughly chopped
  • 1 Tbsp. Dijon Mustard
  • 1 Tsp. Lemon Juice
  • 1 Tbsp. Fresh Rosemary
  • 1/2 Tsp. Curry Powder
  • 1 Cup Frozen Mixed Vegetables
  • 1/4 Cup Parmesan Cheese, shredded


  1. Boil large pot of salted water.  Add potatoes and cover, cooking for 15 minutes or until potatoes are soft. Drain. Add 1/2 cup milk, salt & pepper, and 1 Tbsp. butter. Mash to desired lumpiness level. 
  2. In a large pan, melt 1 Tbsp. butter over medium heat. Add onions and garlic and cook for 5 minutes or so. Stir in flour.
  3. Whisk in milk, Dijon mustard, lemon juice, rosemary and curry powder. Continue to whisk constantly until t reaches a thick consistency. Add chicken and frozen vegetables and stir for another 3 to 5 minutes.
  4. Spread chicken mixture in a 1.5-quart casserole dish. Spread mashed potatoes on top. Sprinkle with Parmesan cheese. Broil for about 5 minutes or until cheese melts. Serve hot. 

Disclaimer(s)... there's a couple.

  1. I assembled this and refrigerated overnight. Then heated in the oven the next evening, DON'T do this. Your creamy and yummy chicken mixture/sauce will break because of the cream. Like mine did. Much to my dismay. It still tastes fabulous, just isn't as pretty as it should be. 
  2. I'm putting my pictures at the end because honestly, they're pretty crappy. I decided to add food blogging to this site pretty much simultaneously as I was making this recipe and didn't make anything look pretty and delicious like a good food blogger should. So I'll be working on that over the next, well moving forward.
